Favourite cupcake recipes?

Or any sortof cake mixtures really.

I have milk, marg, flour, sugar - granulated and icing, baking powder (though I don't really know what it's used for specifically), golden syrup & eggs.
Ooh, I also have some flakes and some creme eggs!

I also have a cheat sponge mix but I don't feel like cheating, the kitchen is clean and I'm home alone!

I always use the simple 4oz recipe for cupcakes and sponge cakes. My mum taught it me lol

4oz marg
4oz flour
4oz sugar
2 eggs

Works like a charm!

ha, it just occurred to me that we don't have a weighing scale.
How much is 4oz in terms of cup sizes? Doesn't really need to be accurate, but would one cup be enough, if we go with a mug type cup?

Oh I don't know....possibly. So long as you keep the measurements of the 4oz things constant and add enough egg without it being too runny it should be ok.
So for example you would use:

1 Cup marg
1 Cup flour
1 Cup sugar
1-2 eggs depending on consistency

Does that make sense? I'm crap at describing things lol

i always weigh my eggs, usually 2 or 3 depending and then put the same amount of butter, caster sugar and self raising flour.
cream butter and sugar, add one egg with a bit of flour, etc etc.
then oven for about 20mins, perfect every time!
and if you want to make it into a chocolate cake, substitute 50g of flour for cocoa powder
